Aji (Colombian Pepper Salsa) w/ Moringa

Ingredients
 3 Jalapeno or serrano peooers
 3 Cayenne peppers
 1 Red bell pepper
 1 Bunch cilantro
 2 Large tomatoes
 ½ White onion
 3 Scallions
 4 Garlic cloves, minced
 Juice of 3 limes
 1 tsp Pink salt
 ¾ tsp Cumin
 ¼ cup White wine vinegar
 1-3 tsp Moringa powder (optional)

Finely chop all the peppers, cilantro, onion, scallions, and tomatoes. Then, add to a blender or food processor along with the minced garlic, lime juice, salt, cumin, vinegar, and moringa, if using.

Lightly pulse the mixture to desired consistency. Adjust seasonings to taste. Place aji in a bowl or container and refrigerate overnight in order to let the flavors intensify.
