Aji (Colombian Pepper Salsa)

 3 Jalapeno or serrano peooers
 3 Cayenne peppers
 1 Red bell pepper
 1 Bunch cilantro
 2 Large tomatoes
 ½ White onion
 3 Scallions
 4 Garlic cloves, minced
 Juice of 3 limes
 1 tsp Pink salt
 ¾ tsp Cumin
 ¼ cup White wine vinegar

Finely chop all the peppers, cilantro, onion, scallions, and tomatoes. Then, add to a blender or food processor along with the minced garlic, lime juice, salt, cumin, and vinegar.


Lightly pulse the mixture to desired consistency. Adjust seasonings to taste. Place aji in a bowl or container and refrigerate overnight in order to let the flavors intensify.
