In a large bowl, add eggs and lemon juice and whisk well. Add rest of ingredients and mix until everything is well combined. Batter should have a similar texture to cake batter.
Pour batter into parchment-lined loaf pan. Bake for 45-60 minutes. Cake should be lightly brown, and a toothpick inserted in the center should come out clean.
Transfer cake onto a cooling rack and let cool until it is room temperature. While waiting, make the glaze with the directions below.
Combine all ingredients in a bowl and whisk together with an electric beater until smooth. Refrigerate for 10 minutes.
Pour glaze over cake and enjoy! Make sure cake is completely cool before glazing.
