Combine 3 tablespoons of flax meal with 6 tablespoons of water in a small bowl. Set aside for 5 minutes or until mixture becomes gel-like.
Preheat oven to 375 degrees.
In a large bowl, combine all wet ingredients. Mix together the dry ingredients in a separate bowl. Add the dry ingredients into the wet ingredients and stir until just combined.
Fold in any of the "your way" add-ins, whatever combo you'd like. Then, pour into a greased loaf pan and bake for 40-60 minutes, depending on your oven. Bread is done once a toothpick inserted in the center comes out clean.
