 1 egg
 3 tbsp water
 ½ tsp Vanilla extract
 ½ tsp Salt
 1 tsp Baking powder
 1 cup Creamy peanut butter, no sugar (sunflower seed butter works great, too!)
 ¾ cup Monk fruit
  tsp Xanthan gum
 Chocolate chunks, if desired (preferably Stevia-sweetened semisweet chocolate)

Preheat oven to 375 degrees.

Beat together the egg, water, vanilla, salt, and baking powder. Add the rest of the ingredients (peanut butter, monk fruit, and xanthan gum) and combine. Dough should be crumbly.

Line a baking sheet with parchment paper. Roll tablespoon-sized balls and place onto the baking sheet. Using a cup, lightly press cookies down, and, if desired, place a chocolate chunk in the center of them.

Bake for 10-12 minutes. Allow cookies to cool for 5-10 minutes before removing them from the sheet.
