Raw Vegan Alfredo Sauce

Ingredients
 1 cup Raw cashews
 ½ Onion
 ½ cup Plant-based milk (coconut milk works best)
 3 cloves Garlic
 Juice of 1/2 lemon
 ¼ cup Nutritional Yeast
  tbsp Tahini
 ½ tsp Salt
 1 tsp Italian seasoning
 1 tbsp Green onions

Soak cashews in boiling water for a few minutes. Use just enough water to cover the cashews. Set aside.

In a high-powered blender, blend the chopped onion, milk, and peeled garlic cloves. Add the cashews, water, lemon juice, nutritional yeast, tahini, salt, Italian seasoning, and green onions. Blend until smooth.

Check the consistency and flavor of the sauce. If it is too thick, add 1 tablespoon of hot water or a splash of coconut milk. Add a splash of apple cider vinegar, if desired. Enjoy the sauce with pasta, zucchini noodles, or any of your other favorite Alfredo dishes!

Serving suggestion:

Saute green onions and zucchini noodles. Season with salt, pepper, Italian seasoning, and rosemary to taste. Add chopped tomatoes or any other vegetables and saute until cooked through. Pour Alfredo sauce over zucchini noodles, add chopped fresh basil, garnish with green onions, and enjoy!

For a completely raw option, pour Alfredo sauce over uncooked seasoned zucchini noodles.
