Vegetable Lo Mein (Gluten + Soy FREE!)

Ingredients
2 tbsp Avocado oil or coconut oil
2 Cloves of garlic, minced
1 cup Chopped green cabbage
Bean sprouts - as much as you desire- 1/2 cup is a good place to start
1 head of Broccoli, chopped
3 Green onions, chopped
2 Small carrots, cut in long strips
3 Stalks of celery finely diced
1 package Guten free noodles. Rice noodles ok. If you are on a low starch diet use Zucchini noodles
Pinch of salt and white pepper to taste
Ingredients for lo Mein Sauce
1 tbsp Minced fresh ginger
2 Minced cloves of garlic - Add more if desired
½ cup Coconut aminos
2 tbsp White vinegar
¼ cup Toasted sesame seed oil (can add more to taste)
1 tbsp Coconut sugar opr monk fruit (or to taste)
½ cup cup Water- (can add more)
Salt to taste
Directions
1Make the noodles: Cook noodles according to package directions. Meanwhile, chop the vegetables (garlic, cabbage, bean sprouts, broccoli, green onions, carrots, and celery).
2Make the sauce: Mince garlic and ginger. In a small saucepan, add all sauce ingredients and simmer for 2 minutes, stirring frequently. Taste and adjust salt levels, if necessary.
3Cook the veggies: Heat the oil in a large pan over medium-high heat. Add all chopped vegetables and around half of the sauce. Saute until desired tenderness. Add salt and pepper to taste.
4Fold cooked noodles and rest of the sauce into veggies until well incorporated. Enjoy!
5*Note: If you like a spicy Lo Mein, add red chili sauce OR sprinkle cayenne pepper on top of your portion. Sriracha sauce works well too.
