Ingredients for the Cake
 5 Eggs
  cup Fresh lemon juice or and lime juice
 ¼ cup Coconut oil
 2 tbsp Coconut cream (from a coconut milk can)
 2 cups Refined almond flour
 2 tbsp Coconut flour
 3 tbsp Tapioca flour
 1 tsp Baking powder
 1 tsp Baking soda
 ½ tsp Salt
 1 tsp Vanilla extract
 ¾ cup Monk fruit
 5 drops Stevia sweetner
Ingredients for the Glaze
  cup Grassfed orgnic cream cheese Or plant base cream cheese
  cup Coconut cream or organic heavy cream
 ¼ cup Monk fruit
 3 drops Stevia
 1 tsp Vanilla extract
 1 tbsp Lime or lemon juice

Preheat oven to 375 degrees Fahrenheit. Line a loaf pan with parchment paper. Set aside.

In a large bowl, add eggs and lemon juice and whisk well. Add rest of ingredients and mix until everything is well combined. Batter should have a similar texture to cake batter.

Pour batter into parchment-lined loaf pan. Bake for 45-60 minutes. Cake should be lightly brown, and a toothpick inserted in the center should come out clean.

Transfer cake onto a cooling rack and let cool until it is room temperature. While waiting, make the glaze with the directions below.

For the glaze:

Combine all ingredients in a bowl and whisk together with an electric beater until smooth. Refrigerate for 10 minutes.

Pour glaze over cake and enjoy! Make sure cake is completely cool before glazing.
