 This recipe makes one pizza crust. To make two, double the recipe and split all ingredients into two bowls.
Ingredients
 ½ head Cauliflower
 1 Egg or egg replacement
 1 cup Finely grated mozzarella cheese
 ¼ tsp Dried Parsley
 ¼ tsp Garlic powder
 ¼ tsp Onion Powder
 Dried thyme and oregano to taste (optional)
 1 tbsp Pesto (optional
 2-3 tbsp Coconut flour - Start with 2 tbsp. Add more if crust is too wet.
  tsp Xanthan Gum
 Pinch of salt

Preheat oven to 400 degrees Fahrenheit.

In a food processor, add the lightly steamed cauliflower and pulse until a rice-like texture has formed. Do not over process. Remove cauliflower from food processor and squeeze out the extra moisture using a nut bag or a cheese cloth.

Add cauliflower to a bowl along with the rest of ingredients and mix until a dough forms. If crust is too wet, add more coconut flour.

Line a baking sheet with parchment paper and place the dough on top. Using your hands, carefully press down on the dough to form a circle about 1/4 inch thick.

Bake crust at 400 degrees Fahrenheit for 12 minutes. Remove crust and parchment paper and lightly grease baking sheet with avocado oil. Flip crust directly onto baking sheet and bake for an additional 10 minutes, or until golden brown. Let crust cool before topping.
