Introduction
 This is a delicious alternative to the classic, cheese-based keto rolls! They are great used as hamburger buns or simply eaten on their own. Keep in mind, however, that they do not expand as much as their cheesy counterparts and are slightly more dense. However, they are still DELICIOUS, fluffy, and bread-like, and, in my opinion, a lot yummier than regular ol' bread rolls. Seriosuly, these didn't last 5 minutes in my household of hungry people! So if you make this recipe, be sure to hide yourself a few rolls before it's too late!
Ingredients
 1 ½ cups Almond flour
  cup Psyllium husk
 1 tbsp Coconut flour
 ¼ tsp Xanthan gum
 ½ tsp Salt
 2 tsp Baking powder
 ½ cup Organic kefir
 2 tbsp Melted butter
 5 drops Monk fruit drops OR 1/16 tsp Monk fruit extract
 3 Egg whites
 ¼ tsp Cream of tartar
 (Optional) Sesame seeds

Combine the almond flour, psyllium husk, coconut flour, xanthan gum, salt, and baking powder in a large bowl. Then, mix in the kefir, melted butter, and monk fruit drops until everything is well incorporated.

In a separate bowl, beat together the egg whites and cream of tartar using an electric mixer until stiff peaks form. Gently fold egg whites into the rest of the ingredients. Do not over mix.

Form dough into balls of desired size and place on a parchment lined baking sheet. These balls won't expand too much, so make sure you shape them as big or as small as you need them. Sprinkle the tops with sesame seeds, if desired.

Bake at 375 degrees Fahrenheit for 40-45 minutes or until balls are golden brown. Let rolls cool to room temperature. This recipe makes around 6-10 balls, depending on how big you make them.
