Dry Ingredients
 2 ¼ cups Gluten free all-purpose flour
  cup Tapioca flour
  cup Almond meal flour
 1 tsp Baking powder
 1 tsp Baking soda
 1 tsp Pink Himalayan salt or Celtic sea salt
 ½ tsp Cinnamon (optional) or to taste
 ¼ cup Coconut sugar
Wet Ingredients
 2 cups Grated zucchini
 ¼ cup Unsweetened applesauce (or an individual serving size cup)
 2 Eggs or egg replacement (3 tbsp flax seed + 6 tbsp water)
 ¼ cup Plant base milk
 1 tbsp Coconut oil
 1 tsp Vanilla
 ½ tsp Apple cider vinegar (brags) or lemon juice
 3-5 tbsp Maple syrup (depends how sweet you want your bread)
Your Way Options
 2 tsp Orange zest
 5 Dates, chopped
 ¼ cup Walnuts or pecans
 ¼ cup Raisins
 ½ cup Fresh berries
 Chocolate chips (organic/ no soy)
 Fall spice (add 1/8 tsp ginger, 1/8 tsp cloves 2 tsp cinnamon)
 Apple cinnamon (add ½ diced apple and 2 tsp cinnamon)
Create Your Own Egg Replacement, If Using

Combine 3 tablespoons of flax meal with 6 tablespoons of water in a small bowl. Set aside for 5 minutes or until mixture becomes gel-like.

Preheat oven to 375 degrees.

In a large bowl, combine all wet ingredients. Mix together the dry ingredients in a separate bowl. Add the dry ingredients into the wet ingredients and stir until just combined.

Fold in any of the "your way" add-ins, whatever combo you'd like. Then, pour into a greased loaf pan and bake for 40-60 minutes, depending on your oven. Bread is done once a toothpick inserted in the center comes out clean.
