Ingredients
 2 cups Sprouted spelt flour
 1 tbsp Melted coconut oil
 1 tsp Salt
 1 tsp Alluminum free baking soda -if not using mineral water and using plain water.
 ¾ cup Mineral water- Pelegrino. Room Temperature - can use plain warm water.
 1 tbsp Maple syrup - Can add up to 3 tbsp.
If Not Using Mineral Water:

Combine flour, salt, and baking powder in a medium bowl. Add melted coconut oil.
In a separate bowl, combine warm water with maple syrup. Slowly pour over dry ingredients, stirring well until dough starts to form. Add more liquid if dough is too dry.

If Using Mineral Water:

Combine flour, salt, and baking powder in a medium bowl. Pour mineral water over over dry ingredients slowly. Add your maple syrup and mix until a dough forms. Add more liquid if dough is too dry.

Form the dough into a ball. Cover and refrigerate for 20 minute.

Flour a flat surface. Make 1"-2" dough balls. This recipe makes about 10-12 balls. Using a rolling pin, roll out dough balls into your desired thickness. The thinner they are, the more tortilla-like they will be.

When you are almost done with rolling out your flat breads, heat a griddle, or pan over medium heat. Melt 1 tablespoon of coconut oil. Make sure your pan is hot. Place the bread on the pan and turn the heat to medium-low. Cook 1-3 minutes on each side. When you see air bubbles on your flat bread, that means it is done.

Take flat bread off pan and keep warm and moist by placing a damp cloth over them until you are ready to eat.
