Egg replacement
 1 tbsp Ground flax seed
 3-5 tbsp Room temperature water
 2 Apples
Dry Ingredients
 1 ½ cups Spelt flour
 1 cup Oats (quick or regular)
 ½ tsp Baking soda
 1 tsp Baking powder
 ½ tsp Salt
 ¼ tsp Cinnamon
  tsp Cloves and/or nutmeg (optional)
 ½ cup Monk fruit
Wet ingredients
 ¼ cup Maple Syrup
 ½ cup Applesauce
 ¾ cup Almond milk
 1 tsp Vanilla extract
 2-3 tbsp Coconut oil
 ½ tbsp Lemon juice

Preheat the oven to 375 degrees Fahrenheit

Stir together the flax seed and water. Let mixture sit for a few minutes. This will act as the "egg."

Peel, core, and dice the apples.

To a large mixing bowl, combine all the wet ingredients.

In a separate bowl, mix all the dry ingredients together. Add the dry ingredients and the flax seed egg into the wet ingredients and mix until just combined. Fold in the diced apples.

Line a muffin tin with cupcake liners. Fill each tin about 3/4 of the way full. This mixture will make 12-14 muffins. Bake 19-24 minutes. Let cool for about 2 minutes before removing from muffin tin.
