Ingredients
2 stalks thinly sliced celery (1 1/4 cups)
1 cup chopped red onions
2 cups cooked quinoa (boil 4 cups of water and add quinoa- season with salt, garlic powder)
1 cup loosely packed basil, finely chopped and/or ¼ cup of parsley finely chopped
4 ounces (3/4 cup) cherry tomatoes, halved (regular tomato will work as well)
3 tablespoons fresh lemon juice (from 1 lemon)
drizzle of extra-virgin olive oil
Kosher salt and freshly ground pepper to taste
chopped feta cheese or goat cheese

Lightly sauté the onion and the celery. Add salt to taste. Stir vegetables into the quinoa, along with the rest of the ingredients. Enjoy!
